What oil is used in bicycle hydraulic brakes?

Broadly speaking, hydraulic disc brakes designed for bicycles will use either a mineral oil fluid, or an automotive DOT fluid. Genuine Shimano Mineral Oil is the only fluid compatible with Shimano brakes.

Baby oil could be used in an emergency, but its higher viscosity could affect performance, and may have a lower boiling point than the proper stuff.

Short answer is no. Baby is not suitable for hydraulic brake oil usage. Shimano has a specific oil for this purpose and I’m strongly recommending that you use that oil. It cost under 30 €/litre and you need maybe one centiliter when you bleed your brakes.
